Ingredients
Matcha Base
🍵 1 cup (240ml) whole milk (or coconut milk for dairy-free)
🥛 1 cup (240ml) heavy cream (or full-fat coconut cream)
🍯 ¼ cup (60ml) honey (or maple syrup for vegan option)
🍵 1½ teaspoons high-quality matcha powder
🍚 2 tablespoons granulated sugar
🥄 ½ teaspoon vanilla extract
🧂 ⅛ teaspoon salt
Lavender Swirl
🌸 ¼ cup (60ml) heavy cream (or coconut cream)
🌿 2 teaspoons dried culinary lavender
🍚 2 tablespoons granulated sugar
🥄 ½ teaspoon cornstarch (to help with swirl consistency)
Directions
- In a small saucepan, heat ¼ cup heavy cream over low heat. Add the dried lavender and let it steep for 5-7 minutes. Do not boil!
- Strain out the lavender using a fine-mesh sieve. Stir in 2 tablespoons sugar and ½ teaspoon cornstarch. Mix well and set aside to cool.
- In another saucepan, whisk together whole milk, heavy cream, sugar, and honey over medium heat until warm (do not boil).
- In a small bowl, sift the matcha powder to remove clumps, then whisk with a few tablespoons of warm milk until fully dissolved.
- Add the matcha mixture back into the saucepan. Stir in vanilla extract and salt. Remove from heat and let it cool to room temperature.
- Pour the matcha mixture into a Ninja Creami pint container. Cover and freeze for at least 24 hours.
