HoursEquipment Required: Ninja Creami, small saucepan, whisk
Ingredients
1 cup (240ml) whole milk 🥛 (or oat milk for dairy-free)
¾ cup (180ml) heavy cream (or coconut cream for vegan)
¼ cup (50g) granulated sugar 🍚
1 tbsp corn syrup (for extra creaminess)
1 tsp vanilla extract 🍦
½ tsp dried culinary lavender 🌿 (or 1 tsp lavender syrup)
1 tiny pinch of salt 🧂
½ tsp xanthan gum (helps prevent ice crystals)
Directions
- In a small saucepan, heat the milk over medium heat until warm but not boiling. Add the dried lavender and let it steep for 5 minutes to infuse its floral aroma.
- Strain out the lavender, returning the infused milk to the saucepan. Stir in sugar, corn syrup, and salt, whisking until dissolved.
- Remove from heat and stir in heavy cream and vanilla extract. If using xanthan gum, blend it in for extra smoothness.
- Pour the mixture into the Ninja Creami pint container, ensuring it’s below the max fill line. Cover and freeze for 24 hours.
- Once fully frozen, insert the pint into the Ninja Creami machine. Use the Gelato or Ice Cream setting.
- If the ice cream looks crumbly after processing, add 1 tbsp milk and re-spin. Repeat if needed.
- For a stronger lavender flavor, drizzle ½ tsp lavender syrup and re-spin.
- Scoop into bowls or cones, garnish with a sprinkle of dried lavender or a drizzle of honey 🍯.
Notes
- ✅ For a stronger lavender flavor, let it steep for 10 minutes instead of 5.
- ✅ Make it a protein treat! Replace sugar with 2 tbsp vanilla protein powder.
- ✅ For a lighter version, swap heavy cream for Greek yogurt or coconut milk.
Tips for the Creamiest Lavender Vanilla Gelato in Your Ninja Creami
- Use culinary lavender only. Buy lavender labeled for cooking. Craft or garden lavender may be treated and can taste soapy.
- Time the steep. Steep for 5 minutes, then taste. If you want more flower flavor, give it 2 or 3 more minutes. Going past 10 minutes can turn the milk bitter.
- Strain well. Use a fine mesh strainer so no buds end up in the pint. Bits of bud feel scratchy in a smooth gelato.
- Blend in the xanthan gum. The 1/2 teaspoon of xanthan gum clumps if you just stir it in. Use a stick blender or shake the base in a jar for 30 seconds.
- Cool before freezing. Let the infused base reach room temperature before it goes into the freezer. This helps the corn syrup and cream keep the texture soft.
- Add vanilla off the heat. Heat fades vanilla. Stirring it in after the pan comes off the stove keeps the warm vanilla note strong next to the lavender.
Troubleshooting
- Tastes like soap: Too much lavender or too long a steep. Cut back to 1/4 teaspoon of buds next time.
- Lavender flavor is too faint: Freezing hides delicate flavors. Steep a bit longer, or add the lavender syrup and RE-SPIN.
- Slimy or gummy feel: Too much xanthan gum. Measure carefully and never go over 1/2 teaspoon per pint.
- Crumbly with oat milk: Plant milks freeze harder. Add 1 to 2 tablespoons of oat milk and RE-SPIN.
Storage and Serving
Store any leftover Lavender Vanilla Bliss gelato in the Ninja Creami pint with the lid on for up to 2 weeks. Floral flavors can grow stronger as they sit, so taste it after a few days. RE-SPIN before serving to bring back the silky texture.
This gelato is lovely with fresh blueberries, lemon shortbread cookies or a light drizzle of honey. For a pretty touch, top each scoop with a few dried lavender buds right before serving.
Lavender Vanilla Gelato FAQ
Can I skip the corn syrup?
Yes, but the Ninja Creami lavender vanilla gelato will be a little firmer. You can use 1 tablespoon of honey or light agave instead, which also pairs nicely with lavender.
Can I use vanilla bean instead of extract?
Scrape the seeds from half a vanilla bean into the milk while the lavender steeps. You will see pretty black specks and get a deeper vanilla taste.
How do I make it purple?
Lavender does not tint the milk much. Add a few blueberries to the base and blend, or use one drop each of red and blue food coloring for a soft purple shade.
