Silky molasses custard gelato spiced with ginger, cinnamon, and clove, finished with crunchy gingersnaps. Makes 1 Ninja Creami pint (about 2 cups / 473 ml). Best November through January.

Ingredients

  • 🥛 240 ml (1 cup) whole milk, cold

  • 🍶 80 ml (⅓ cup) heavy cream, cold

  • 🫚 1¼ tsp (2.5 g) ground ginger, fresh jar

  • 🌰 ½ tsp (1.3 g) ground cinnamon (Ceylon for a softer note)

  • 🌿 ⅛ tsp (0.3 g) ground cloves

  • 🥜 1 pinch ground nutmeg

  • 🧂 ⅛ tsp (0.7 g) fine sea salt

  • 🥚 3 large egg yolks (about 54 g), room temperature

  • 🟤 30 g (2 packed tbsp) dark brown sugar

  • 🍯 40 g (2 tbsp) unsulphured molasses (not blackstrap)

  • 🌼 ½ tsp (2.5 ml) pure vanilla extract

  • 🫚 1 tsp (5 g) finely grated fresh ginger (optional)

  • For the mix-in
  • 🍪 2–3 gingersnap cookies (about 20 g), crushed into pea-sized bits

Directions

  • Warm the spiced milk. Pour the cold milk and cream into a medium saucepan. Whisk in the ginger, cinnamon, cloves, nutmeg, salt, and fresh ginger if using. Heat over medium-low for 4–5 minutes, stirring often, until small bubbles form at the edges and it reaches about 80 °C (175 °F). Do not let it boil.
  • Whisk the yolks. While the milk warms, whisk the egg yolks, brown sugar, and molasses for about 1 minute, until lighter in color and falling from the whisk in a thick ribbon.
  • Temper the eggs. Slowly pour about ½ cup of the hot milk into the yolks in a thin stream while whisking nonstop. Pour slowly; speed is the number one cause of lumpy custard.
  • Cook the custard. Pour the yolk mixture back into the saucepan. Cook over low heat, stirring constantly and scraping the bottom, for 4–6 minutes, to 77–80 °C (170–175 °F). It is ready when it coats the back of a spoon and a finger line stays clean. Never go above 82 °C (180 °F).
  • Strain and flavor. Pour the custard through a fine-mesh strainer into the Creami pint. Stir in the vanilla. Make sure the liquid sits at or below the MAX FILL line.
  • Cool it down. Set the uncovered pint in an ice bath for 10 minutes, stirring twice. Lid it and chill in the fridge for 2 hours, until below 5 °C (41 °F).
  • Freeze flat for 24 hours. Freeze the lidded pint on a level shelf at −18 °C (0 °F) or colder for a full 24 hours. If the top has a hump, scrape it level before spinning.
  • Spin on GELATO. Remove the lid, place the pint in the outer bowl, lock on the processing lid, and run the GELATO program (LITE ICE CREAM on models without Gelato). If it looks dry or crumbly, add 1 tbsp (15 ml) milk and run RE-SPIN. Repeat once if needed.
  • Add the gingersnap crunch. Make a 4 cm (1½ inch) wide hole down the center to the bottom of the pint. Drop in the crushed gingersnaps and run the MIX-IN program.
  • Serve and enjoy. Scoop into chilled bowls right away, about 5 minutes after spinning, at −12 to −10 °C (10 to 14 °F). Dust with cinnamon and top with half a gingersnap. Smooth the top of leftovers, re-lid, and refreeze.

🔄 Substitutions

  • Dairy-free: Swap milk for oat milk (barista style) and cream for full-fat canned coconut cream.
  • Egg-free: Skip the yolks. Whisk 1 tbsp (8 g) cornstarch into 2 tbsp of the cold milk, and stir it into the simmering milk for 2 minutes until slightly thick.
  • Gluten-free: Use certified gluten-free gingersnaps (Kinnikinnick or Schar).
