Directions

  • Infuse the Flavor: In a saucepan, combine heavy cream, milk, and the seeds scraped from the vanilla beans. Heat over medium heat until it begins to simmer. Remove from heat and let it steep for 15 minutes to infuse the vanilla flavor.
  • Sweeten the Mix: In a mixing bowl, whisk together sugar and salt.
  • Combine Ingredients: Slowly pour the warm cream mixture into the sugar, whisking constantly.
  • Chill the Mixture: Pour the mixture into a container and refrigerate for at least 4 hours, or overnight for best results.
  • Prep Your Ninja Creami: Ensure your Ninja Creami pint is frozen for at least 24 hours.
  • Pour and Freeze: Pour the chilled mixture into the Ninja Creami pint and freeze solid, about 24 hours.
  • Time to Creami: Place the frozen pint in your Ninja Creami and select the ‘Gelato’ setting.
  • Churn to Perfection: Let the machine run until the cycle is complete, usually about 5 minutes.
  • Serve Immediately or Store: Enjoy your gelato immediately for a soft-serve consistency, or transfer it to an airtight container and freeze for a firmer texture.
  • Garnish and Enjoy: Serve in a bowl, garnished with a sprig of mint or extra vanilla beans for an elegant presentation.

  • Made some ice cream but it’s not hitting that creamy sweet spot? Easy fix! Just use the re-spin function. Pop your pint back in, select RE-SPIN, and voila! Once it’s done, you’ve got yourself some ultra-creamy, dreamy gelato. Just a little heads up – this trick works best on ice cream that’s already been spun. If it’s been frozen solid again, stick to the usual process.
