Ingredients
1 cup (240ml) whole milk 🥛 (or oat milk for dairy-free)
¾ cup (180ml) heavy cream (or coconut cream for vegan)
¼ cup (50g) granulated sugar 🍚
1 tbsp corn syrup (for extra creaminess)
1 tsp vanilla extract 🍦
½ tsp dried culinary lavender 🌿 (or 1 tsp lavender syrup)
1 tiny pinch of salt 🧂
½ tsp xanthan gum (helps prevent ice crystals)
Directions
- In a small saucepan, heat the milk over medium heat until warm but not boiling. Add the dried lavender and let it steep for 5 minutes to infuse its floral aroma.
- Strain out the lavender, returning the infused milk to the saucepan. Stir in sugar, corn syrup, and salt, whisking until dissolved.
- Remove from heat and stir in heavy cream and vanilla extract. If using xanthan gum, blend it in for extra smoothness.
- Pour the mixture into the Ninja Creami pint container, ensuring it’s below the max fill line. Cover and freeze for 24 hours.
- Once fully frozen, insert the pint into the Ninja Creami machine. Use the Gelato or Ice Cream setting.
- If the ice cream looks crumbly after processing, add 1 tbsp milk and re-spin. Repeat if needed.
- For a stronger lavender flavor, drizzle ½ tsp lavender syrup and re-spin.
- Scoop into bowls or cones, garnish with a sprinkle of dried lavender or a drizzle of honey 🍯.
